Typically our Brewer\u2019s Dinners are about half sold out before we even release the menu. Just saying\u2026<\/p>\n<p><strong>Background on the CBC Green Movement: <\/strong><\/p>\n<p>But first, In case you didn\u2019t know, we\u2019ve very much been a part of the \u2018green\u2019 movement here in Cambridge. In other words we\u2019re trying to do the right thing. For you and the environment.<\/p>\n<p>We\u2019ve been a green certified business for over a year now.  Along the way to getting certification, we\u2019ve executed many \u2018green initiatives.\u2019<\/p>\n<p>For instance we\u2019ve been donating the spent grain from our brewing process to local farms as feed for years. We\u2019ve also had a robust recycling and composting program in place for years. Instead of throwing our leftover foodstuff in the trash so it can go on to be dumped in the landfill, we compost it so it can go on to become nutrient rich soil.<\/p>\n<p>One of our most recent additions has been a 300 gallon water recycling tank to reuse heated water from our brewing process the next day. That way we are burning less gas (to heat said water) and using the water that used to just go, quite literally, down the drain.<\/p>\n<p>Perhaps most importantly are the changes that Chef David Drew has made in the Kitchen over the last 2 years.<\/p>\n<p><strong>Did you know&#8230;<\/strong><\/p>\n<ul>\n<li> ALL of the meat cooked at CBC is all naturally raised!<\/li>\n<li> We also buy most of our veggies, fruits and cheeses from local farms like Verrill Farms in Concord and Butterbrook farms in Acton.<\/li>\n<li> We\u2019ve had pigs raised, humanely and naturally, just for us by our good friends at Colchester Neighborhood Farms.<\/li>\n<li> And we now have a Cambridge Farmers Market Plate on our regular dinner menu that features dishes that are 100% sourced from local farmers markets.<\/li>\n<\/ul>\n<p>Chef Dave literally rides his bike to the various Cambridge farmers markets and picks out produce for the Market Plate. And our customers are loving it! It\u2019s fresh, delicious and they can enjoy it with a good conscience.<\/p>\n<p>So what does this mean for you? It means that by dining at CBC you\u2019re supporting local businesses. You\u2019re eating fresh and natural foods \u2013 tastier and better for you!
