Under the heading of “Be careful what you ask for!” we have the Wild Game Beer Dinner. People are signing up quickly. We are already half way to the 50 mark. Should we make room for 60?

Course 1 – Summer’s End. Wild Game Liver Creme Caramel – What? Liver puree imparts a mild liver flavor, with sweet caramel custard, served cold, garnished with pancetta, watercress, arugula, balsamic vinegar soaked dried figs and fresh berries.

Course 2 – Nightcrawler Black IPA. Wild Boar Cranberry Sausage – Grilled sausage placed in house made flatbread with braised napa cabbage. Garnished with spicy sweet fruit chutney.

Course 3 – XSB (Earthy). Wild Rice Stuffed Quail – Even the Rice is Wild! Fresh herbs, wild rice stuffing with grilled quail glazed with sweet berry sauce and plated with fresh greens.

Course 4 – Face-off DIPA. Venison Steak with Celery Root Puree – Steak is grilled to medium rare and plated over celery root puree with roasted root vegetables (Parsnips, turnips and radish). Steak is finished with morel sauce.

Course 5 – Chocolate Porter. Chocolate Moose! Elegant, decadent, rich, creamy moose is made with cocoa and quail eggs and served in a chocolate crumb spoon with fresh whipped cream and raspberry garnish.
